Nectarine & Heirloom Tomato Panzanella

Ingredients

  • 3 heirloom tomatoes, cut into wedges
  • 2 nectarines, sliced
  • 2 cups torn sourdough, toasted
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Handful of basil

Method

  1. Toss the tomatoes and nectarines with olive oil and vinegar, let sit 10 minutes.
  2. Fold through the toasted bread just before serving so it softens slightly.
  3. Finish with torn basil.
