Grilled Peach & Prosciutto Salad

Ingredients
- 3 yellow peaches, halved
- 6 slices prosciutto
- 2 cups rocket
- 1 tbsp olive oil
- 1 tsp red wine vinegar
- Shaved parmesan
Method
- Grill the peach halves cut-side down until char marks form.
- Toss the rocket with olive oil and vinegar, then plate.
- Top with the grilled peaches, draped prosciutto, and shaved parmesan.
