Chargrilled Corn & Black Bean Salad

Ingredients

  • 3 corn cobs, chargrilled and kernels removed
  • 1 can black beans, rinsed
  • 1 heirloom tomato, diced
  • 1 lime, juiced
  • 2 tbsp olive oil
  • Handful of coriander

Method

  1. Char the corn cobs on a grill or hot pan, then cut off the kernels.
  2. Combine with the black beans and diced tomato.
  3. Dress with lime juice and olive oil, then finish with coriander.
