Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup English peas
  • 1/2 cup edamame
  • 1 avocado, sliced
  • 2 tbsp herb dressing (parsley, lemon, oil)
  • Handful of pumpkin seeds

Method

  1. Layer the quinoa in a bowl as the base.
  2. Arrange the peas, edamame, and avocado over the top.
  3. Spoon over the herb dressing and finish with pumpkin seeds.
