Purple Cabbage

Purple cabbage keeps for three weeks in the crisper and still shreds crisp on day twenty-one, which is more than most vegetables in this spotlight can say. It's here for the color as much as the keeping quality — that cut cross-section is doing a lot of the composition's work before a single prop gets added.
